200ml recently pressed lemon juice
500g fine sugar

200ml citrus syrup (as made above)
Fresh cranberries, as a garnish

Directions

For the Syrup: Put the listed ingredients into a pan, heat until it reaches a light boil, stirring so the sugar melts. Then, take off the burner and leave to cool entirely. Decant into an sealable bottle, close it keeping it in the fridge, where it will keep for about four weeks.

For the Batch Mix: Mix every liquids into a big jug, let it rest for an hour, then filter it preferably using muslin, so it's completely strained.

When ready to serve: Pour 85ml of the premix into a cocktail shaker filled with ice, gently stirring gently for a minute until cold. Filter into a cold coupe glass or a similar vessel, decorate with some cranberries adding the final touch using a light spray of mandarin oil above the glass.
